One Pot Ceci Fettuccine
Ingredients
Serves 5 - 6
- 1 onion, chopped
- 2 tbsp olive oil
- 6 cloves garlic
- 2 cups garbanzos, cooked
- 4-5 cups vegetable stock
- 1/3 - 1/2 jar of sun dried tomatos, drained
- 1 tbsp rosemary (leaves or ground)
- 1 lb fettuccine, broken in half
- salt and pepper to taste
Preparation
- In a large 3-quart pot, saute onions in oil for 5 minutes, or until translucent.
- Stir in garlic and cook for 1 minute.
- Add garbanzos, stock, tomatos, and rosemary and bring to a boil.
- Stir in fettuccine and cook, stirring occasionally, about 20 minutes, or until pasta is firm-tender (al dente), and sauce has thickened.
- Add salt and pepper and serve while hot.
