Everyone's Favorite Carrot Cake
Ingredients
Serves 10-12
- 1 cup light oil
- 1 and 1/2 cups of honey
- 1/3 cup raisins
- 1 tbsp lemon peel
- 4 cups grated carrots
- 1 cup crushed walnuts
- 4 cups flour
- 1 tbsp baking soda
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 1 tsp nutmeg
- 1/2 tsp cardamom
- 1/2 tsp all spice
- 1/2 tsp corriander
Preparation
- Combine wet ingredients well.
- Add in the carrots.
- Mix together all dry ingredients and then stir into the wet ingredients.
- Mix well and pour into two oiled 9 inch round baking pans.
- Bake at 350 degrees for about 30 minutes until done.
- Optional Frosting: Mix soy margarine with generous amounts of confectioners sugar. (When you think you've added too much sugar, add more.) Mix well.
Tastes yummy with avocados!
